Pairing Guide Part 1: With Drink

A beautiful dessert is an indulgence. Cloud11 Head Chef Manuela Sanin and Founder Nick Pritzker, who happens to be a sommelier, created a list of exquisite libations that compliment each of their delicately-dosed confections.

 

Strawberry Pink Peppercorn

For this bright and creamy bonbon, we chose a 2019 Giacomo Bologna Braida Brachetto d’Acqui. This Italian frizzante is naturally floral and red-fruit forward – a perfect compliment to the deep berry notes in the chocolate. Light and effervescent, this wine paired with our Strawberry Pink Peppercorn desert is the perfect way to pass a leisurely afternoon or end a late summer meal.

 

Salted Peanut

This silky, sweet, and salty treat deserves a rich companion. We chose a Basil Hayden 12 Year because of its complementary notes of honey, caramel, and nut. Notably, Basil Hayden has a higher rye base than other bourbons which lends notes of spice that balance the creamy richness of the peanut butter. You’ll find notes of peach and summer fruit in this drink—paired with our Salted Peanut bonbon make an elevated and decadent PB&J.

 

Black Sesame Yuzu

This sophisticated chocolate marries a rich nuttiness with a flair of citrus. This exotic combination pairs beautifully with Emporer Wings of a Butterfly jasmine tea. The jasmine in this extraordinary tea blend brings out the smokiness of the roasted black sesame seeds. All three flavors are delicate. The yuzu builds on the sesame and the addition of jasmine further builds on top of the already inspired pairing in the Black Sesame Yuzu chocolate.
